Almost any player has lower Dark absorption and Defense, so a Dark-infused weapon should do more damage with the same AR, but Hornet Ring boosts Chaos Dagger enough that it's much stronger. I'm still trying to figure out how weapon buffs play into this. The only difference in damage 2handing a weapon will do is with regard to strength scaling, as you receive 1.5x strength when 2handing. So 2handing an elemental weapon (or something with zero strength scaling) will not increase the damage it does. 2handing does increase poise damage and often has a better move-set than 1handed attacks.
